Broadbean Balls Recipe
Broad Beans are packed with vitamins A, C, Iron, calcium, fibre and potassium.
1 x 500grams serves 4-6
Ingredients:
1 x 500grams Broad Beans
1 x Bunch/ Pack Spinach
2 Large Onion finely chopped
Flat Parsley chopped
Dried Mint 1/4 teaspoon
Salt & Pepper
2 large Eggs
Bread Crumbs
Cooking Oil for deep frying
Method:
Do not Presoak. Wash the broad bean and spinach with cold water, cover with hot water and simmer for 35 minutes.
Allow the water to absorb. Sieve and add to a large mixing bowl.
Add the onion, parsley, mint, salt & pepper break eggs into mixture.
Stir mixture together and start adding the breadcrumbs a little at a time.
You want a mixture that you can mould into a ball, at the same time watching the breadcrumbs… broad beanballs, not dough balls.
Heat your cooking oil, test with a little bit of bread…when the bread starts browning add your broad beanballs. Fry till golden brown in colour.
Serve with a nice crispy salad.
