Broad Bean And Spinach Recipe

A traditional Cypriot dish full of flavour.  Broad bean and spinach have a good source of vitamins and minerals.

Broad beans are packed with vitamin A, C, Iron, calcium, dietary fibre and potassium.

Spinach is a good source of vitamin C, niacin, riboflavin and potassium, fibre, zinc, thiamin, calcium and iron.

Not bad for a budget meal.

500gm pack serves 4 

Do not presoak.

Ingredients:

1 x 500gram Broad Beans

1 pack/bunch Spinach

Vinegar/Balsamic Vinegar

Salt & Pepper

Olive Oil

Method:

Wash Broad Beans and Spinach with cold water.

Place both in a large saucepan and cover with hot water. Simmer for 30 to 40 minutes till broad beans are soft and whole.

Sieve and place in a large serving bowl add salt pepper, vinegar and olive oil. Mix together.

Serve with crusty bread, sliced raw onion and olives on the side.
